The ultimate existence of a cookie, whatever form, size, or decoration it has, depends on a sugar cookie recipe. When you already have your own, you become an absolute cookie baker; you could do anything!

A good cookie recipe should be the following:

  1. Dough does not need to be chilled
  2. Edges are perfect, thus maintaining the cookies’ shape when baked
  3. Soft and delicious
  4. Easy to be decorated
  5. Freezes well

Here’s the sugar recipe for all occasions and for all decorations:

You will produce 2 dozen cookies.
Prep Time: 30 minutes
Baking Time: 6-8 minutes
Total Time: 38 minutes

Ingredients:

2 cups all-purpose flour
1 teaspoon baking powder
1 egg
3/4 cup unsalted butter
3/4 cup granulated white sugar
1/2 teaspoon almond extract
1 teaspoon vanilla extract
1/4 teaspoon salt


Directions:

  1. Preheat oven to 350° F.
  2. Mix butter and sugar until smooth.
  3. Incorporate and beat extracts and egg.
  4. In a separate bowl, mix flour, baking powder, and salt. Add them gradually to the wet ingredients. Expect the dough to be stiff. When this happens, turn out the dough onto a counter-top surface and knead it by hand.
  5. Do not chill the dough. Divide them into batches before you roll and cut. Make sure that the cookies’ sides are approximately ¼ inch.
  6. Bake them for 6 to 8 minutes. Let them cool until they are firm to transfer to a cooling rack.

The dough appears sticky and crumbly. What should I do?


Do you know the Play-Doh clay’s texture? Expect your final dough to have the same texture as that clay toy. What you could do is to turn out the dough onto a floured surface. While kneading the dough into smooth balls, it’s completely okay to add more flour. Don’t be afraid! You could actually incorporate unused flour remnants so you won’t get to waste any dough.

Though it says that it is not necessary to chill the dough, may I know if it is okay because I need to make them 3 days in advance?
It is okay if you need to make it in advance. Wrap it tightly with a plastic and refrigerate. By the time you are going to roll and cut it, warm first the dough to room temperature. Prepare some extra flour as you might add more when the need arises.

The cookies seemed under-baked. Can I bake them a little longer?


Pull the cookies out and set an 8- to 9-minute mark. They will continue to bake while you cool them. After cooling, transfer them to a wire rack.
